I saw this car near the PDPU junction in Ahmedabad today. This looks like a Gazel. The car looked restorable.

May I point out that it's NOT a Gazel but a herald- the rear end with the tail fins is enough of a giveaway. This model is specifically a '66-67 Standard Herald mk2 which came with this bonnet shape. Besides a few original fitments, the car's lost its roof- maybe it's already been 'restored' by someone recently??

It is surely a herald. The herald came in a convertible version as well.

Not the ones made in India though- the so-called convertibles we've seen here are merely hardtop saloons with the roof removed, all the more common among the 'restored' cars that pop up on social media these days, hence my earlier comment (yes I do know the roof can be taken off by removing some bolts all around etc, but that does NOT make it a convertible).
In any case, convertible or otherwise is not what identified this as a herald.

The Twin headlight model in this picture, was it custom made or an imported Triumph Vitesse? Reason I asked is cos, my dad used to own a twin headlight model back in the early nineties.

If my understanding is correct, the only twin headlight Heralds made in India were the station wagon variants, the Standard Herald Companion Mark 2 and Mark 3. There were two or three of them in my hometown Calicut (Kerala) in the 1970s and 1980s

Thank you for that piece of information, Singer 1948. My dad owned a garage in Bangalore hence, I'm not sure if he chose to modify it.. Let me try getting some pix of the car to clear this doubts.

I was browsing through Google images and found a picture of this car with an estate body and a Gazel front end. Were these factory estates or were they coach built like the Padmini star line?

Yes this model was produced albeit in very small numbers. I remember seeing just one in Hyderabad many years ago but sadly didn't bother looking too close or taking pics as I had then dismissed it as some owner-modification! Until I got to know of a few more examples having existed!
I was under the impression that they were factory-produced but according to a friend from Chennai (who had relatives working for the company) these were made in limited numbers by a sister firm called Unicorn, so possibly coach-built, and the roof and tailgate were made entirely of fibreglass.
A similar version called the Mark III Companion existed in the 4-door Herald, and I have seen a couple of those up close as well as a few more in old movies (background vehicles, NOT the 'made for film' contraptions).
