Why are you suspecting the ABS sensors but not the changed brake pads and skimmed rotor? Check if the clearance between the new brake pads and the rotor is proper. I suspect the brake pads are not having enough clearance from the rotor which should be the reason why your car feel sluggish.

I replaced all 4 sensors out of an abundance of caution after 2 failed in short succession 2 years ago. Fast forward to last week and one more has failed, got that replaced under warranty but then two days after the car came back yet another one has failed. I guess I take the lead in this thread with 4 failures and 6 (or maybe 8? Let's see) replacements in 2 years.
