What toppings have you used, chicken or ham?
1. Yeast whether natural (as in sourdough) or granular is necessary to develop gluten. Atta just takes longer to develop gluten.

2. The topping were Pork Pepperoni Salami in one Pizza and Chicken and mutton fermented sausages in the other.

This is the recipe I follow for making anything with whole wheat, whether bread, pav, burger buns or pizza base. I haven't used it as pizza dough directly ,as in, I always bake the base before and then add toppings and cheese.

Only one issue, in my family, save for me and my daughter, my parents & wife are vegetarians, so, we can't use eggs and I do not know, how it will come out without using egg/s.

Fingers crossed.

We are trying something today, will let you guys know the results [with picture if it comes out good].

Yeah, I think eggs are important in that recipe. Because before this one, I had tried other whole wheat recipes and although the bread tasted great, it used to crumble very easily when cutting. Every whole wheat bread will be a little crumbly though compared to maida bread but I find whole wheat bread to be far more tasty and fulfilling, especially homemade one.

Hot Cross Buns

Hot cross buns,
Hot cross buns.
One a penny,
Two a penny,
Hot cross buns.

Made a batch now. Tastes great, though the crosses are wonky...

It came out pretty well. Better than what we made earlier, we used ~20% of all purpose flour and rest was wheat aata (flour). Similarly, for the samosa, it was some 10% or lesser all purpose flour and rest wheat aata.

Re: Recipes / Discussions on cooking from Team-BHP Master Chefs

Question for the South Indian folks - Do you have a recipe for making chutney powder?

I tried this MTR one -

Name: Picture1.png
Views: 492
Size: 369.5 KB

Turned out to be the most hideous chutney powder I've had in my life - only thing I could taste in this was salt! Threw away rest of the packet.

During college days some folks from Andhra and Tamilnadu used to get home made chutney powder that we used to many times eat with dosa/rice/idli. Those used to be absolutely top-notch. Very divine!

Wonder if people on the forum have a favorite chutney powder recipe they can share?

Simplest one Ma made often when we were kids was this: gram (chana, not chana dal), dried coconut, few red chillies, dried curry leaves.

Roast together, powder, add salt to taste. Bit of sugar/powdered jaggery, if you prefer a hint of sweet with the spice. Done.

Makes for a good base, one can add various other dried spices to vary the taste.

If You love Garlic, there is no better place to add than here
You cannot go wrong with adding a few peanuts too.

This is the basic recipe. If you think this is too salty, slightly reduce the salt required. You can always add more later. https://hebbarskitchen.com/idli-podi...odi-gunpowder/

Re: Recipes / Discussions on cooking from Team-BHP Master Chefs

With lockdown, everyone is a baker and I also decided to try my hand at it.

Ordered some yeast. Along with some maida, salt, water, I did not realize just how much I was kneading it.

These are the first set of bakes I have done in my kitchen in the past few days.
I would rate the Focaccia a flop although it tasted really fine.

Loved the other breads and I am gonna keep practicing this magic.

Recipes / Discussions on cooking from Team-BHP Master Chefs-img20200522183704.jpg

Recipe as follows :

- boil and strain nutrella nuggets.
- rise them in cold / normal water and rise out access water
- coarsely chop two medium size onions, 2-3 green chillies, 5-8 garlic pods, small ginger bud, a few mint and coriander leaves
- grind all the ingredients. Do not add water while grinding. We need a thick paste.
- add corn flour and maida in equal quantities. Around 2 to 3 big table spoon.
- add red chilli powder, garam masala, coriander powder, amchur powder, salt to taste, chat masala
- mix all the ingredients well.

- heat oil in a frying pan.
