You can, like @Phoenix mentioned above. I know of someone who did this recently - buy in Goa, registered here.

The reason being non availability of the desired variant in Karnataka.

I heard we have to get a temporary registration from the RTO where you are buying and then pay some entry tax ams get it registered in your state.

Actually this quite common - buy in one state and then register in another. Treat it as bringing a car from another state. and registering it.

When you buy, you can opt for a "Temporaty Registration". That allows you to move between states for one month.
